Sauteed Vegetables with Soba Noodles

Currently, I am addicted to soba noodles. In truth, I love any kind of noodle (carb queen!) but these are my latest obsession. They’re easy to make and can be used in all sorts of dishes from salads to stir-frys. Last night, I went on a vegetarian tear, cutting up all sorts of spring veggies and some tofu for an Asian-flavoured dish with a soy-rice wine vinegar-hoisin-Sriracha sauce. If I’d had some mirin, I’d have used that, too, but I just grabbed what I had in the cupboards.

Serves 3 – 4

Ingredients

2 packages soba noodles, cooked
2 tb vegetable oil
1 2-inch piece of ginger, grated or finely diced
1 shallot, finely diced
4-5 stalks asparagus, ends trimmed, cut to bite-sized pieces
1 c broccoli
1 – 2 carrots, peeled and julienned
2 tb soy sauce
1 tb hoisin
1 1/2 c firm tofu, drained and cubed
4 – 5 handfuls of spinach leaves
1 c peas
2 tb rice wine vinegar
Sriracha to taste

Directions

1. In a large pan, heat the oil to medium heat. Add the ginger and shallot and sauté for 3 minutes.
2. Add the asparagus, broccoli and carrots along with the soy and hoisin. Sauté another 3-4 minutes.
3. Toss the spinach in next and allow to wilt a little before adding the tofu and peas. Salt and pepper to taste.
4. Add in the rice wine vinegar and Sriracha to taste.
5. Serve over the cooked soba noodles. Garnish with sesame seeds and scallions if you like!

Shrimp & Mango over Soba Noodles

You want to make this. Trust me. It’s got lots of different textures, it’s easy to make, it’s healthy and it’s delicious.

Serves 2.

Ingredients

1tb canola oil                               
1 mango, sliced thinly
1/2 red pepper, sliced thinly
1/2 orange pepper, sliced thinly
handful of snow peas
12-16 shrimp, peeled & deveined
1 c roasted peanuts
1/4 c chopped cilantro
2 packages of soba noodles

Sauce

1 lime, juiced
2 tb soya sauce
2 tb hoisin
1 tb oyster sauce
1 tb rice wine vinegar
2 tb ginger
1 ts sesame oil
1 ts hot sauce

Directions

1. In a small bowl, combine all the ingredients for the sauce.
2. Boil a pot of water for the soba noodles and cook to the directions on the package. (Usually two minutes tops.) Drain.
3. Heat up canola oil in a wok or large pan to medium-high heat. Add peppers & shrimp, cooking for 1 minute.
4. Add in mango, snow peas and peanuts. Cook 1 minute.
5. Add in sauce and drained noodles. Cook another minute until all ingredients are coated with the sauce and shrimp are pink.
6. Serve and top with cilantro.

Orange-Ginger-Lime Soup

So comforting on cold days and super easy to make! Ingredients can be added or removed per your tastes. Whatever is in the fridge will work! (If you add mushrooms, though, put them in last. They shrivel up pretty quickly.)

Serves 4.

Ingredients

2 c orange juice
2 c chicken/vegetable stock
2 packages soba noodles
1 red/green/yellow pepper, sliced
1 carrot, shredded
1/2 cabbage, shredded
1/2 onion, sliced
12-16 shrimp, shelled
2 ts soy sauce
1 tb ginger, grated
1 lime
1 tb hot sauce (*less if you don’t like things too spicy)

Directions

1. Bring orange juice and broth to a boil.
2. Reduce heat to medium and add grated ginger and vegetables. Cook 2 minutes.
3. Add soy, juice of one lime and hot sauce. Taste and adjust if necessary. If it’s too spicy, add a little more oj.
4. Toss in shrimp and noodles. Cook 3 minutes.
5. Remove from heat and slurp away!
