Cheese Muffins

Makes 12.

Ingredients

2 1/2c all-purpose flour
1tb baking powder
1tb sugar
1ts salt
1c Cheddar cheese, grated
1 1/4c milk
1 egg
1/4c butter, melted

Directions

1. Preheat your oven to 350F and line or butter a muffin tin.
2. Mix together the dry ingredients in a large bowl.
3. Add the cheese, milk, egg and butter to the dry ingredients. Stir to combine but do not overmix.
4. Spoon equal amounts into the 12 muffin cups and bake 15-18 minutes, until a toothpick inserted into one of the muffins comes out clean.
5. Allow them to cool for 2-3 minutes and enjoy!

  1. Ah, cheddar cheese muffins are my dad’s classic breakfast. He has the recipe memorised after so many repetitions. They are amazing warm!
